• 700g sweet potatoes

  • 10g ground cumin

  • 10g ground coriander

  • 5g ground cinnamon

  • 10g finely chopped parsley

  • 5g cayenne

  • Juice and zest half lemon

  • 125g plain flour

  • 1 clove crushed garlic

  • 200g roughly chopped chick peas

  • 50g sesame seeds to roll in

For the sauce

  • 3-4 tablespoons greek yoghurt

  • 10g chopped mint

  • juice 1 lemon

  • 15ml extra virgin olive oil

Sweet Potato and Chickpea Falafel

Roast the sweet potatoes at 180C for approximately 40 minutes until soft. Cool in their skin, then peel.

Put the flesh together with everything else in a bowl, mash with a fork, season well. Chill 2 hours minimum.

Roll into 50-60g balls, then roll in sesame seeds and bake at 180C for 20 minutes.

Sauce – whisk all the ingredients together.

Serve falafels and salad in a pitta with sauce spooned over.
